Great as a substitute for Salad Dressing or as a traditional Salsa

One of my favorite dishes I found. Mofongo is a Caribbean plantain preparation which is used as a mild counterpoint to the seared lamb chops and spicy sauces. There is some last-minute preparation for this dish, cooking the lamb and vegetables, but none of this last-minute effort takes a lot of time. You could even prepare the vegetables early, then heat them for the table in the last-minute saute.

Carne Asada is a grilled beef dish, literally meaning “roasted meat”. It is one of the most popular varieties of Hispanic food more commonly in the Northern parts of Mexico and in Puerto Rico. It can be found as the main ingredient in tacos, tortas, burritos and fajitas, or is simply served alone as a meal. It is sold at Mexican meat markets called “carnicerias” in the Southwest (CA, AZ, and NV). You won’t find this recipe anywhere.
