Crostini with Proscuitto, Goat Cheese, & Apricot preserves By susy

A great easy appetizer that tastes as great as it looks!

Ingredients

  • 1 Baguette - Cut into 1/2 inch slices
  • 12 slices Prosciutto - Cut in 1/2
  • 8 oz Goat Cheese
  • 1 jar Apricot Jam
  • 1 bunch Italian Parsley - Chopped
  • 4 Tbsp Olive Oil

Procedure

  1. Heat oven to 350 degrees or (you can use a Panini press)
  2. On a cookie sheet, place the slices of baguette, drizzle with olive oil.
  3. Bake for 10-12 minutes or until golden.
  4. Spread the slices of baguette with apricot jam.
  5. Lay 1/2 slice of Prosciutto on top of apricot jam.
  6. Place a small amount of Goat Cheese to top of Prosciutto.
  7. Sprinkle with Italian Parsley.
