Crostini with Proscuitto, Goat Cheese, & Apricot preserves

A great easy appetizer that tastes as great as it looks!
Ingredients
- 1 Baguette - Cut into 1/2 inch slices
- 12 slices Prosciutto - Cut in 1/2
- 8 oz Goat Cheese
- 1 jar Apricot Jam
- 1 bunch Italian Parsley - Chopped
- 4 Tbsp Olive Oil
Procedure
- Heat oven to 350 degrees or (you can use a Panini press)
- On a cookie sheet, place the slices of baguette, drizzle with olive oil.
- Bake for 10-12 minutes or until golden.
- Spread the slices of baguette with apricot jam.
- Lay 1/2 slice of Prosciutto on top of apricot jam.
- Place a small amount of Goat Cheese to top of Prosciutto.
- Sprinkle with Italian Parsley.
