Pasta is one of the simplest dishes to make but if you do it right, it can be a spectacular piece de resistance.

Ingredients

  • 2c semolina flour
  • 2c all-purpose flour
  • 4 eggs, lightly beaten
  • 1tbsp olive oil
  • Salt to taste

Procedure

  1. Combine the dry ingredients together
  2. Lightly flour a counter. Sift the flour with a pinch of slat into a mound. Make a well in the center and add the eggs and olive oil
  3. Using a fork or your fingertips, gradually work the mixture until the ingredients are combined. Knead vigorously for 10-15 minutes
  4. Set the dough aside to rest for 15-20 minutes, before rolling it out as thinly and evenly as possible
