Basic Pasta Dough

Pasta is one of the simplest dishes to make but if you do it right, it can be a spectacular piece de resistance.
Ingredients
- 2c semolina flour
- 2c all-purpose flour
- 4 eggs, lightly beaten
- 1tbsp olive oil
- Salt to taste
Procedure
- Combine the dry ingredients together
- Lightly flour a counter. Sift the flour with a pinch of slat into a mound. Make a well in the center and add the eggs and olive oil
- Using a fork or your fingertips, gradually work the mixture until the ingredients are combined. Knead vigorously for 10-15 minutes
- Set the dough aside to rest for 15-20 minutes, before rolling it out as thinly and evenly as possible
